Artichoke Salad

What You'll Need

1 lb Jerusalem artichokes
3 celery sticks, thinly sliced
6 green onions, thinly sliced
4 tbsp fresh cilantro, chopped
Handful of walnut pieces
2 oz rocket leaves
2 tbsp extra virgin olive oil
1 tbsp balsamic vinegar
1 garlic clove, crushed
Salt and pepper to taste
Sprinkle of sugar

Preparation:

Peel the artichokes and immediately place them in a saucepan of water with a bit of lemon juice to avoid discolouring. Bring to a boil and cook until tender. Drain and set aside. In a bowl, mix together the oil, vinegar and garlic. Season with salt and pepper and a sprinkle of sugar. Place the artichokes into a serving bowl. Add the celery, green onion, walnuts and cilantro. Add the dressing and toss gently. Adjust seasoning and enjoy warm.
