Baked Sweet Potatoes

What You'll Need:

2 medium sweet potatoes
1 15oz can black beans, drained and rinsed
1 tomato, diced
2 tsp olive oil
½ tsp ground coriander
½ tsp ground cumin
¼ tsp salt
2 tbsp plain yogurt
2 tbsp fresh cilantro, chopped

Preparation:

Place sweet potatoes on a microwavable dish, prick each potato with a fork several times and microwave on High until tender (about 12 – 15 minutes). Set aside to cool slightly.

In the meantime, combine oil, spices, salt and beans in a saucepan and heat gently.

Cut each sweet potato lengthwise and press open. Spoon the bean mixture on top of the sweet potatoes, add a dollop of yogurt and sprinkle with cilantro.
