Bean and Raisin Cookies

What You'll Need:

1 15oz can pinto beans, rinsed, drained and pureed
½ cup butter or margarine
1 cup brown sugar (or less)
2 free-range eggs
¾ cup chunky applesauce (sugar free if possible)
2 ¼ cup all-purpose flour
½ tsp cinnamon
½ cup nuts of your choice
1 tsp baking soda
1 tsp baking powder
½ cup raisins

Preparation:

Preheat oven to 375°Fahrenheit. Lightly grease a cookie sheet.

Place sugar and butter in a mixing bowl and mix together with an electric mixer until creamy. Add eggs and blend well. Mix in pureed pinto beans and applesauce with a wooden spoon. Beat until fluffy.

In a separate bowl, combine all dry ingredients and add to the creamed mixture. Blend well and stir in nuts and raisins.

Drop one tablespoon per cookie onto greased cookie sheet and bake for about 15 minutes or until golden brown. Allow to cool.
