Beans and Spinach

What You'll Need

8oz uncooked black beans, washed
1 lb fresh baby spinach, roughly chopped
3 tbsp lemon juice
1 tsp cumin powder
6 tbsp olive oil
2 cloves garlic, crushed
Salt and pepper to taste

Preparation

Place uncooked beans in a large pot and cover with cold water. Bring to a boil and boil for about 5 minutes. Strain. Cover beans with fresh water again, add lemon juice and cook covered for about 20 minutes.

Add the spinach to the beans, season with salt and pepper and simmer for a further 10 minutes.

Heat the oil in a skillet and sauté the garlic. Stir in the cumin powder and stir constantly for a few minutes. Add the garlic mixture to the casserole, mix well, adjust your seasoning and serve immediately with a bowl of couscous.
