What You'll Need
1 ¼ cups wholegrain rice, washed and drained
2 cups coconut milk (fat-reduced if possible)
1 cup water
1 tsp cumin seeds
1 juice of a fresh lime
2 tbsp fresh cilantro, chopped
½ tsp salt
Preparation:
Combine the rice, coconut milk, water, cumin seeds and salt in a saucepan. Quickly bring to a boil, reduce heat and cover with a tight-fitting lid. Simmer the rice for 45 minutes (without lifting the lid). Then set aside and let it sit for a further 5 minutes. Add the fresh cilantro, lime juice and cumin seeds and combine.
