Cottage Cheese Salad

What You'll Need

1 cup of cottage cheese (low fat)
1 Granny Smith apple, cored and chopped
2 tomatoes, chopped
1 spring onion, finely chopped
Mixed lettuce leaves
Red and green grapes, chopped
Fresh black pepper
Freshly chopped parsley


In a bowl, combine all ingredients, except the lettuce leaves and parsley. Arrange mixed lettuce leaves on a serving plate, add the cottage cheese mixture, season with black pepper and sprinkle with parsley. Serve immediately with cut up vegetables, such as carrot sticks, celery sticks and whole grain crackers.
