What You'll Need
8oz couscous
2 ½ cups Water, boiled
½ cup olive oil
1 yellow bell pepper, de-seeded and finely chopped
Juice and zest of 2 lemons
4 green onions, finely chopped
6 tbsp freshly chopped mint
Salt and pepper to taste
Preparation:
Place the couscous into a large bowl and pour the boiling water over it. Stir and let the couscous sit and soak up the water until tender, about 6 – 8 minutes. Add the remaining ingredients and stir well. Season with salt and pepper.
