Fish Curry Low Fat

What You'll Need:

1 tbsp olive oil
1 large onion, chopped
1 garlic clove, chopped
1-2 tbsp curry paste (mild or hot, depending on your taste)
14oz can tomatoes
4 fl oz vegetable stock (or more if necessary)
White fish fillets, cut into big chunks (about ½ lb)
Handful of cooked prawns (optional)
Fresh cilantro, chopped

Preparation:

In a large skillet, heat the olive oil and add the onion and garlic. Gently cook for about 5 minutes or until tender. Stir in the curry paste and fry for a few minutes. Add the tomatoes and stock and bring to a simmer. Allow to simmer for about 10-15 minutes, then add the fish and prawns. Gently simmer until the fish flakes easily and is no longer opaque inside.
