Garbanzo Beans and Okra

What You'll Need

1 lb okra trimmed
1 large onion, finely chopped
1 clove garlic, crushed
3 tomatoes, chopped
1 green chilli, de-seeded and finely chopped
½ inch fresh ginger, grated
2 tbsp vegetable oil
½ oz butter
1 tsp ground cumin
1 tbsp freshly chopped cilantro
14oz can garbanzo beans, drained
Sea salt and black pepper

Preparation:

In a wok or large skillet, heat the oil and butter. Add the chopped onion and garlic and stir-fry for about 5 minutes until the onion is starting to soften. Then add the tomatoes, chilli and ginger and give it a good stir.

Then add the okra, cumin and cilantro and stir-fry for a few minutes, before adding the garbanzo beans. Cook for a further few minutes until the beans are hot. Season well and serve immediately with a bowl of rice.
