Grapefruit Salad and Prawns

What You'll Need

1 tbsp olive oil
1 medium onion, finely chopped
8 oz peeled prawns
2 tbsp fresh lemon juice
4 tbsp dry white wine
4 tbsp low-fat mayonnaise
1 tsp Tabasco sauce
2 ruby red grapefruit, peeled and segmented and cut in half
1 yellow bell pepper, diced
Black pepper

Preparation:

Heat the olive oil in a non-stick pan and sauté the onion until tender. Then add the prawns, lemon juice, wine, salt and pepper and cook for about 5 minutes. Take off the heat and allow to cool slightly. Remove the prawns and onions with a slotted spoon and place into a salad bowl. Stir in the mayonnaise, add the Tabasco sauce and season. Toss carefully. Add the grapefruit pieces and bell pepper and mix gently.
