What You'll Need
4 big red bell peppers
1 lb feta cheese, diced
4 oz black olives, pitted
Juice of ½ lemon
2 tbsp extra virgin olive oil
1 garlic clove, crushed
1 tbsp dried oregano
Preparation
Cut the bell peppers in half lengthwise, remove the seeds but leave the stalk. Place the pepper halves cut side down on a baking sheet and grill until the skin is beginning to char. Then turn the pepper halves over.
Meanwhile, combine all ingredients in a bowl and mix well. Fill the pepper halves with the feta/olive mixture. Grill them until the feta is golden and the peppers are cooked through.
