Macaroni Salad Low Fat

What You'll Need

2 cups dry macaroni pasta
1/3 cup celery, diced
½ cup red bell pepper, chopped
½ cup cucumber, diced
¼ cup red onion, minced
1 large ripe tomato, diced
1/3 cup fat-free mayonnaise
1/3 cup low fat plain yogurt
1 tbsp Dijon mustard
1 tsp sugar
1 ½ tbsp cider vinegar
Fresh parsley, chopped
Salt and pepper

Preparation:

Cook the macaroni pasta according to package instructions, rinse and drain. Combine the pasta, celery, onion, tomato, bell pepper and cucumber in a large bowl. In a separate bowl, mix together the mayonnaise, yogurt, Dijon, sugar and cider vinegar. Season well. Stir the dressing into the pasta/vegetable mix, add the parsley and toss.
