Ingredients:

12 oz pasta shells or spirals (whole wheat if possible)
½ tsp salt
2 tbsp olive oil
1 tsp olive oil
1 lb mushrooms, chopped
1 green pepper, diced
1 red pepper, diced
Juice of 1 lemon
¾ cup of single cream
Salt and pepper
2 oz Parmesan cheese, grated

Method:

Cook the pasta shells according to packet instructions in a large pan of boiling Water with added salt and oil.

In a large frying pan, heat the oil and stir fry the vegetables for about 5 minutes. Add the cooked pasta, cream, salt and pepper and lemon juice and mix thoroughly. Pour the pasta mixture into a gratin dish, sprinkle with the Parmesan cheese and put under the grill until golden brown and hot.

Enjoy immediately with a tossed green salad!
