What You'll Need
6oz small pasta shapes
¾ cup red onion, finely chopped
¾ cup yellow bell pepper, diced
¾ cup carrots, peeled and diced
¾ cup fresh peas, cooked
2 tbsp extra-virgin olive oil
½ tsp hot sauce
¼ cup lemon or lime juice
Salt and pepper
Cook pasta according to package directions, drain and set aside.
Heat a dash of olive oil in a large skillet and sauté the onion, yellow bell pepper and carrots for a few minutes. Season with salt and pepper. Then add the vegetables, including the peas, to the cooked pasta.
In a small bowl, mix together the olive oil, lemon or lime juice and hot sauce. Season with salt and pepper and pour over the pasta. Toss gently and adjust your seasoning.
