Salmon Fillets

What You'll Need

2 lbs salmon fillets, cut into serving size pieces
1 red bell pepper, seeded and chopped
1 Avocado, finely chopped
2 cups cherry tomatoes, chopped
1/4 cup oil and vinegar low-fat Italian salad dressing

Preparation:

Preheat broiler. Combine vegetables and dressing in a bowl, toss and set aside. Arrange salmon pieces, skin side down, on a baking sheet/broiler pan. Place under the broiler until the salmon flakes easily with a fork. This depends on the thickness of your salmon, about 10 minutes per inch of thickness. Serve immediately.
