Sweet Potatoes and Ginger

What You'll Need:

4 large sweet potatoes, cleaned and dried
½ cup onion, finely chopped
1 ½ tbsp vegetable oil
4 tbsp crystallized ginger, minced
2 tbsp sultanas
2 tbsp prunes, chopped
Salt and pepper to taste

Preparation:

Preheat oven to 450 degrees Fahrenheit.

Place the sweet potatoes onto a baking sheet and bake for about 50 minutes or until soft. Set aside to cool for about 10 minutes. Then cut each potato in half lengthwise. Scoop out the sweet potato flesh, but leave about ¼ inch along the skin.

In the meantime, heat the vegetable oil in a frying pan. Add the chopped onion and sauté gently until tender, but still translucent.

In a bowl, mix together the sweet potato flesh, sautéed onion, ginger, sultanas, prunes and salt and pepper. Spoon the mixture into the sweet potato skins, return to the oven and bake for about 5 – 10 minutes or until hot. Serve immediately.
