Zucchini Soup
What You'll Need
4 cups vegetable stock
2 lb zucchini, grated
1 medium onion, minced
2 tbsp olive oil
2 tbsp fresh dill, minced
1 cup fat-reduced sour cream
White pepper
Preparation:
In a large saucepan, heat the olive oil and sauté the onion until soft. Add the grated zucchini and cook for another 5 minutes. Then add the vegetable stock and bring to a quick boil. Allow to simmer for about 10 minutes.
